An energetic free spirit with a strong bond with nature, Chantel Dartnall describes her cooking style as "botanical cuisine�. Dartnall opened Restaurant Mosaic at the Orient Boutique Hotel in Pretoria in October 2006 and has been head chef ever since. She says "fun, innovation, passion, dedication and a good team to support you� are the elements that help make a good chef. In 2008 her restaurant was named one of the top 10 in South Africa, and, in 2009 she was the youngest person to receive Prudential Eat Out's chef of the year award. Dartnall's favourite dish is her star anise-scented lobster bisque served with fresh scallops and baby langoustine tails. "It is such a rewarding dish to prepare as it doesn't take more than an hour but it tastes like heaven.� She derives her inspiration from travelling abroad at least once a year.
